I understand that this kit is for all-grain brewers and requires specialized equipment to brew. Instructions and BeerSmith files are available to help determine strike and sparge volumes and temperatures. It is up to the brewer to determine if this kit is appropriate for their equipment and techniques.

Notes: With wheat making up almost 50% of this grist, it highly recommended to add a pound of Rice Hulls to the mash.  Rice hulls are not included with the kit ingredients.

Gordon recommends a step mash or decoction mash profile for this beer to stay true to the authentic brewing methods however I have simplified the mash temp to a single infusion which most brewers use.  He also recommends a 90 boil.

Liquid yeast recommendations:

White Labs: WLP001, WLP051 or WLP320

Escarpment Labs: Cali Ale, American Ale or Anchorman Ale
