PLEASE READ CAREFULLY: I understand that this kit is for all-grain brewers and requires specialized equipment and knowledge to brew. East Coast Hoppers Kits include Instructions and BeerSmith files to help determine strike and sparge volumes and temperatures. Other kits may require brewing software or a knowlege of brewing calculations to determine water volumes and temperatures. It is up to the brewer to determine if this kit is appropriate for their equipment and techniques.

Notes: With wheat making up almost 50% of this grist, it highly recommended to add a pound of Rice Hulls to the mash. Rice hulls are not included with the kit ingredients.
Gordon recommends a step mash or decoction mash profile for this beverage to stay true to the authentic brewing methods however I have simplified the mash temp to a single infusion which most brewers use. He also recommends a 90 boil.
Liquid yeast recommendations:
White Labs: WLP001, WLP051 or WLP320
Escarpment Labs: Cali Ale, American Ale or Anchorman Ale
