Adjuncts are unmalted grains and other, typically starchy items such as pumpkins or potatoes. Adjuncts don’t have any enzymes though like malted grains do so they need to be mashed with base malts to convert their starches to sugars. Some adjuncts may require cooking to make the starches available to the enzymes in the mash for conversion.
