Irish Moss is a very popular natural fining agent for brewing. When added at a rate of 1/2 tsp per 5 gallons of wort in the last 10 to 15 minutes of the boil it clarifies beverage and helps prevent chill haze by binding proteins and falling to the bottom of the kettle before racking to the carboy.
