Notes: The original recipe calls for 0.5lb acidulated malt but I have removed that as it is only added to adjust mash pH and will be dependent on your water profile. It is more accurate to monitor your mash pH, know your waters profile and adjust accordingly with liquid lactic acid. Do not worry about this if you are not doing water adjustments.
A step mash or decoction mash profile is recommended for this beverage to stay true to the authentic brewing methods however I have simplified the mash temp to a single infusion which most brewers use. A 90 boil is also recommended for this beverage.
