Tasting Notes: This IPA is bursting with hop flavors from the 11+ ounces (almost 3/4lb) of Mosaic, Citra, Simcoe, and Cascade hops used in this recipe. It has a smooth bitterness and a hazy appearance. It can be brewed either as a West Coast IPA or an East Coast IPA (NEIPA), see the notes below.

East Cost version - White Labs: WLP066, WLP067 or Escarpment Foggy London or Vermont Ale
The East Coast version is exactly the same however the 60 minute hop addition is adjusted to 6g for less bitterness and a different yeast is used.
BREWER’S NOTES:
In Brooklyn, we have a very soft, neutral water profile. For the West Coast version, we recommend calcium sulfate, and we aim to stay around 150ppm or less. For the NEIPA, we recommend calcium chloride additions, and we aim to stay under 300ppm chloride. You know your water best, so adjust
accordingly.
