Sweet orange peel is used to add a bright, sweet like citrus flavor mainly in Belgian wits and wheat ales however it makes a great addition to specialty or holiday ales and lagers.
It is recommended to use between 1/2 - 1 oz in the last 15 minutes of the boil for a 5 gallon batch.
