We've had a lot of brewers ask us about making a proper mixed culture for Traditional Berliner Weisse.

Here we've selected the Laerdal kveik to pair with traditional Brett strains that we cultured directly from old Berliner bottles, and slightly hop-resistant Lactobacillus brevis.

We recommend pitching into gently hopped wort (2-3 IBU is traditional) and expect acid development and attenuation over the course of 1-2 months.
